Plus, there is only a muffin pan to clean up!

Ingredients:


- eggs: I find that large eggs are perfect for this dish. They fit nicely in a regular muffin pan. If you are using small eggs, consider adding more cheese or sauteed veggies at the bottom.
- ham: I used honey ham, deli sliced. I used 2 slices per cup. If your ham slices are thicker, one might be enough for each cup.
- cheese: I used a blend of cheddar and Pepper Jack, shredded fresh.
How to make egg cups?

- Place two slices of deli ham in each muffin cup.
- Divide the shredded cheese among all ham cups.


- Gently break an egg into each ham cup, on top of the cheese.

- If you are using a thin-sliced deli ham, use two slices per egg cup. It gives them enough structure to hold the baked egg.
- Add more baking time as needed to achieve the desired level of egg doneness.
- Add sautรฉed onions, garlic, bell peppers, mushrooms, etc., to the cheese layer.

Place ham in each muffin cup.
12 deli slice ham

Divide the cheese evenly among all ham cups.
2 oz cheddar cheese

Bake egg cups for 13 to 15 minutes, depending on how done you like the eggs.

Garnish with salt, pepper, chopped parsley or chives.
Notes
- Large eggs are best for this dish. They fit nicely in a regular muffin pan.
- I used honey ham, deli sliced. I used 2 slices per cup. If your ham slices are thicker, one might be enough for each cup.
- It is helpful to break the egg into a small bowl and then pour it into ham cups. This way, if you have a broken shell piece in the egg, you can easily remove it.
